Easy Vegan Apple Crumble

I can say that my summer is now officially over :) and I´m back in snowy mountains. I feel like I almost skipped Fall and came straight to winter. Some resorts are already running, Christmas songs are on, the fireplace is heating up and my use of cinnamon and ginger cookies went drastically up.

I wanted to share with you one super easy, fast and cheap dessert perfect for this time of the year – Vegan apple crumble.
What you need

5 medium apples, peeled, cored and chopped

2 teaspoons of cinnamon

2 cups of oats

1 spoon of maple syrup

1 teaspoon of coconut butter


Now let´s pretend we can bake

First put on some Christmass music. Then preheat oven to 220 degrees.

Peel and cut the apples, put them into a pan and top them with a bunch (or 1 teaspoon) of cinnamon and cook them until the apples become soft and transfer them into a pie pan.

You can put them directly on a pie pan, but I thought it might be faster and save some energy if I cook them first and then bake them. This way you will need to bake this for only 15-20 min instead of 45min. Does that make sense?:) dsc_0437dsc_0440Time to do the topping. Mix oats, cinnamon and maple syrup. Add melted coconut butter and mix.

dsc_0436Sprinkle topping over the apples and bake until the topping is golden brown (between 15 to 20 min).


Let rest 10-15 minutes before serving. Is great with vegan vanilla ice cream, or even in a smoothie. It might not look like the best dessert in the world, but I absolutely love it. :)


You can really improvise with this one. Use more-less or even zero fat (vegan butter, coconut butter), put in some raisins, dates, cloves, nutmeg (all the things that I didn´t have at home today).
Apple season is still on so you should be able to fins some great and cheap apples on your local farmers market or shop. It´s also a great way to use up all soft or damaged apples you might have standing around and turn them into this delicious dessert.
